A very deep, graphite black colour. The nose is masterful, with notes of pencil lead and gunflint, revealing delicate aromas of small black fruits, blueberries from the lower Alps, and a harmonious, voluptuous palate, with notes of black fruit compote, associated with liquorice, violet zan, and plums with caramel and salted butter.

Pairings: Woodcock tartine, Brochette of thrushes with caddis and wild juniper, Hind pate with cranberries, Grouse confit with a sweet and sour sauce.

This cuvée is made from Grenache plots on the "Les Cassanets" terroir, which is composed of rolled pebbles with a sandy subsoil. These vines were planted between 1956 and 1958 and represent 85% of the vineyard. A parcel of Syrah, in the place called "Les Bédines", on a sandy terroir, makes up the remaining 15%.

The manual harvest began on 15 September for the Syrah and on 25 September for the Grenache. After being sorted in the vineyard, the grapes are transported to the cellar in 300 kg boxes. A partial de-stemming was carried out, the maceration lasted 31 days, with daily manual punching down and delestage.

The Grenache was aged in foudres (6 and 10 years old) for 17 months. The Syrah was aged in Burgundy pieces of 2 and 3 wines for 17 months. The blending was carried out one and a half months before bottling.

The Estate Le Clos du Caillou

The Clos du Caillou estate has the particularity of being an enclave adjacent to the Châteauneuf du Pape appellation area. The vineyard is made up of 44 hectares of Côtes du Rhône and 9 hectares of Châteauneuf du Pape, planted for the most part in 1956. It is composed of the 13 grape varieties authorised for the production of a Châteauneuf du Pape, the Grenache grape variety is the majority for the red wines, followed by Syrah, while the clairette rose, the grenache blanc and the roussanne share the majority of the white grape varieties. The soils here are particularly rich, sandy or pebbly, making it possible to produce wines of exemplary aromatic complexity.
All these specificities, gathered at the heart of the Clos du Caillou estate, allow us to offer very high quality Côtes du Rhône wines, such as the magnificent Quartz vintage, which demonstrates the richness of these exceptional terroirs. In addition, Sylvie Vacheron and Bruno Gaspard have been converting the estate to organic farming since 2006. The 2010 vintage was the first to benefit from the organic label (AB), which completes the quality of the work undertaken for decades.
