This wine is rich and sweet, with an amber color and brown highlights. Ample in the mouth, with nut aromas similar to the Oloroso of Sherry of Spain, mixed with flavors of cooked pear, caramel and spices. The finish reveals smoky notes and orange peels.
The Etko Estate is the oldest in Chrypre, founded in 1844. The name Commandaria dates from 91: Richard the Lionheart gives Cyprus to the Order of the Templars, which named the territories": the "Commanderies". The wine produced on these lands was therefore called Commandaria. Probably one of the oldest wines in the world, but no one is really sure of the age of this wine.
Since 1993, this appellation has been protected by a law delimiting the geographical area, vines that survived phylloxera in 14 villages on the Troodos Mountains, 30 km north of Limasol, the capital of Cyprus, as well as production conditions.
The Commandaria is made from 2 native grape varieties. One is red, Mavro, the other white, Xynisteri.
Mainly agrees on chocolate desserts or as an aperitif.
The grapes must contain a minimum of 2 g/l of sugar at harvest for the white grape and 258 g/l for the red grape. After a minimum of one week of sun-drying, the grapes should obtain an additional sugar content. The mutate is mutated during fermentation with wine brandy before aging in barrels of at least 2 years.
