Many claim that it is the oldest wine in the world, but nobody is really sure of the age of this wine. In 735, the poet Hesiod, already described Chyprus Nama, ancestor of the Commandaria, like a subtle, sweet, mellow wine and high quality. But its history is much older, the Greek of Homer and the Egyptian pharaohs would have consumed this elixir.
The name Commandaria date of 91: Richard Lionheart Cyprus gives the order of the Templars, who named the territories where they put the 'Commanderies'. The wine produced on this land so named Commandaria.
Since 1993, this appellation is protected by a law defining the geographical area, vines that survived the phylloxera in 14 villages on the Troodos Mountains, 30 km north of Limasol, capital of Cyprus, as well as the conditions of production. The Commandaria is made from 2 indigenous varieties. One is red, the Mavro, the other white, the Xynisteri.
The grapes must contain a minimum of 2 g/l of sugar at harvest for the white variety and 258 g/l for the red variety. After drying in the Sun for a minimum duration of one week, the grapes must get additional sugar bringing the Xynisteri 390 g/l and the Mavro to 450 g/l. The must is transferred during the fermentation in the wine spirits, wine is then routed to the cellars of Limasol breeding in order to undergo an ageing in barrels for at least 2 years according to the principle of the solera.

Commandaria and figs roasted with wine from Collioure, another idea of marriage is with the Banyuls of the brothers because the domain of the White House. ""
The Commandaria region
This area is the oldest of Cyprus, founded in 1844 by Christodoulos Haggipavlu in Limassol.
