The Dogfish is the Highness grape. It is a wine race, tender and soft to the remarkable mix of finesse, it perfectly accompanies freshwater fish.
This "Highness" Dogfish has a nice acidity in attack, then power and delicacy give it a persistence in the mouth. To the nose a little violet after aeration, in the mouth of the smoke and the fruit.
This Dogfish can be eaten or to keep a few years to win round 5 to 7 years.
It will be appreciated as an aperitif or on table with a Lake fish, a plate of cheeses made with Tomme de Savoie and the Beaufort, a fish with one entry sucks herbal cream, asparagus or veggies with chiffon sauces, or on the savoyards dishes as raclette or tartiflette.
This sovereignty is typical and round. Breeding of almost ' one year in lightning and a year of conservation after bottling.
All grapes are harvested manually, then pressed and fermentation go with yeasts on the grapes, without external addition. Very little sulphite.
These choices of winemaking and farming gives body and aroma to this wine and this natural wine is even more expressive after a few years of cellaring.
