Super Saint-Aubin 1 raw, pure and persistent. The very calcareous soil of this parcel makes this wine a more mineral St Aubin. To the nose it reveals aromas of citrus and fruit with white flesh. The mouth is precise, rich and elegant. Gently spicy, the superb in Montceau relies on a sharp, Chiseled, juice where the mineral sensation prevails over the thickness of the fruit.
It is eaten to-° C with a grilled dorade. Marc Colin was born in 1944 and created his field at the end of the 1970s; with his wife Michele, they return from vines of several generations, Colin and Ponavoy families, some plots are owned by the family for more than a century. Today, Caroline and Joseph Damien, three of their children, lead the field Marc Colin who covers 19 hectares and includes 26 names on the villages of SAINT-AUBIN, PULIGNY-MONTRACHET and CHASSAGNE-MONTRACHET, SANTENAY. Joseph led a part of the vineyard in reasoned culture and the other part in experimentation of biological culture. Regular soil work allows us to avoid chemical weeding, and get a quality grapes.
