Crémant white, Extra Brut (2 to 3 grams of sugar per liter) or Brut nature, the dosage of expedition liqueur varies from a vintage and from one season to the next.
The vines are in 40 years. The proportion of Chardonnay ranges from 85 to 0%, the Pinot Noir of 0 to 15%.
If crémant is predominantly high in oil reservoir, a part often in old barrels, 5 to 20%, to bring complexity to the final assembly.
There are sparkling wines in the Jura since the 18th century. Pre-2000 and global warming was not uncommon in the Jura, even with dates of late harvest (sometimes until November), having limited maturities to make dry whites. Crémants, like champagne from grapes harvested being between and %, cold years, the Jura benefited so this balance to make sparkling wines.
Appointed wine sparkling wine in the ' 60s, method Champenoise in the 1980s and traditional method in the early 1990s, this type of wine has got the designation crémant in the Jura in 1995.
This sparkling wine is produced as the champagne, the principle of double fermentation. The first fermentation takes place in tank, barrel, or lightning, it allows to obtain a base wine that is dry and quiet. After a breeding of this wine for 6-months 'the MOSS taking', we put the wine base bottled by adding yeasts and sugar. The second fermentation takes place in tightly closed bottle, the carbon dioxide released by the fermentation doesn't get away, the rest of sparkling wine. After the"foam" bottles are stored on battens for twelve months minimum. At the end of this breeding bottles are "excrement", we remove the consecutive fermentation in the bottle deposit and adding the expedition liqueur. It was during this operation that we decide to do a crémant Brut Nature (not), Extra Brut (1 to 6 grams), gross (less than grams), semi-dry (32 to 50 grams)...
