The topping is to regularly fill the drums to always maintain a maximum level of it in order to avoid oxidation of the wine. Indeed, the infiltration of the wine in the barrel as well as the natural evaporation requires this addition to remove the contact with air and oxidizing consequences to the wine.

Produced in the Jura region where not ouilles wines are legion, they can then take the nature or ouille name that differentiates the famous wines from the savagnin grape. In the region, there is almost this famous vine savagnin (much more rarely the chardonnay) who can bear to not be ouillé and produce especially these famous yellow wine, called wine of sailing through this veil of yeast (called training Hat) formed naturally above the level of the wine over farming, and developing this famous taste of yellow to the characteristic flavors of nuts and Morels.
