A great wine! The great Teppes 2015 of Ganevat plays in a registry very Burgundian, pure, salty and spherical, crystalline, rich.
This is one of the cuvées Jean-François Ganevat lights, the great Teppes, resulting from old chardonnay vines, planted in 1919 and 1920.
The vines are evolving on white marl soils and limestone rocks. Yields are low with only 25 hl/ha. The wine has been high in 22 months on the lees in demi-muids.
The wine the great restaurants is a great success, very Burgundian style, with nice aromatic purity.
Salinity was associated with the round ball to form a great wine, crystalline, rich and Cistercian profile.

Jean-François Ganevat returned in 1998 on the ancestral lands of sides of the Jura is the 18th generation to cultivate the vineyards of the family estate of 8.5 hectares.
It produces wines you like, the kind of wines to rival gene names much more prestigious and expensive!

The area is in biodynamics. Yields are very low
The reds are not sulphites and whites receive sulphites to bottling (1 to 2 grams Max.).
Peculiarity of the vinification of Jean-François Ganevat: the topping. Unlike the Jura tradition of not filled trucks white wines in breeding to develop the veil (oxidative wine obtaining), Jean-François Ouch most of his wines in white.
It's a new style for the Jura.
Ouilles wines / wines of sailing
The topping is to regularly fill the drums to always maintain a maximum level of it in order to avoid oxidation of the wine. Indeed, the infiltration of the wine in the barrel as well as the natural evaporation requires this addition to remove the contact with air and oxidizing consequences to the wine.
Produced in the Jura region where not ouilles wines are legion, they can then take the nature or ouille name that differentiates the famous wines from the savagnin grape. In the region, there is almost this famous vine savagnin (much more rarely the chardonnay) who can bear to not be ouillé and produce especially these famous yellow wine, called wine of sailing through this veil of yeast (called training Hat) formed naturally above the level of the wine over farming, and developing this famous taste of yellow to the characteristic flavors of nuts and Morels.
