François Chidaine began with a few hectares of vineyards in Montlouis-sur-Loire in 1989. Passionate, he manages to take advantage of each plot thanks to his perseverance. He diversified his wines and became interested in organic. In 1999, he turned to a culture oriented biodynamics with the support of his wife Manuela. His cousin Nicolas Martin integrated team 3 years later. This trio extends the domain François Chidaine in buying a vineyard in Vouvray.
The Bournais is a white wine from the grape variety Chenin white. The vines are led on a formed soil of clay and limestone, from the Loire Valley to Canada on Loire. The harvest is done by hand, accompanied by successive sorting. The farm is then directed to Lees, demi-muids for 5 to 6 months.
