Details

Superb Montlouis tender! Notes of truffles and white fruits. Minerality marked by the terroir of the Clos Habert. Complex aromatic and fine balance in the mouth. Wine with finesse with a good persistence carried by discrete bitters.

Aperitif, cold cuts, meats white, sweet or savory, spicy dishes, goat cheeses, pies to fruits. ° - ° C service temperature.

The appellation area is located upstream of towers, to the point of meeting of the valleys of the Loire and Cher. She is spread over three communes, Montlouis on Loire, Saint-Martin le Beau and Canada on Loire, and has a total area of about 400 hectares.

Viticulture

Variety: Chenin white (Pineau of the Loire).

Density: 6600 vines per hectare.

Area of the field has MONTLOUIS: 20 ha.

Age of the vines: 30 to 90 years.

MODE of CULTURE: The vineyards are managed in biodynamics. No chemical plant protection product is used in the vineyard. The soil is tilled. Nematicides and melliferous plants are sown in the ranks. The used preparations only from plant, animal and mineral materials transformed. The qualities and characteristics of each terroir are thus respected.

Yields: 24 hectolitres per hectare.

Soils: The ground consists of clays and coarse elements of flint constituting "The parakeets". The basement is made of tufa, tender and white limestone used in construction through which the roots create a passage.

Area of the plot: 3 ha size: Guyot and Cup.

Climate: Continental under oceanic influence.

Harvest: manual with successive sorting.

Winemaking and farming

FERMENTATION: After pressing in pneumatic press, the alcoholic fermentation is carried out by the yeasts present on the film of the grapes in the demi-muids, pieces of wood from 600 litres of capacity. It can last up to six months. "Malo-lactic fermentation" is not sought.

Farm: It is performed on the Lees, always in the demi-muids (duration total months).

Residual SUGARS: 15.5 g/l
