The cuvée Clos:
Plots of vines selected on argilo-limestone hillsides. Assembly equality of Syrah, Mourvèdre, Grenache and Carignan.
Work in intensive green: disbudding, entrecoeurs, load control and stripping. Looking for a perfect phenolic maturity, adapted to each grape variety and each terroir. Sorting the grapes after Destemming. Storage and transport in refrigerated truck. Winemaking partly in new demi-muids of 5 hl, running off to hot, malolactic and breeding in new barrels 0%. All operations of winding, racking, layout barrels are carried out manually, without pumping.
Ageing on Lees 18 months. Unfiltered. The wine is powerful, concentrated, rich in taste, exceptional creamy texture, that remains fresh and tense. Delicious the following year bottling, if you like young and powerful wines, and if one takes care of the decant. Closes often in year II. Then tapers slowly and acquired little by little its mature characters while retaining its fruit.
Cellaring potential 8 to 15 years.
