An exceptional Saint-Emilion Grand Cru! Red fruits, notes of mocha, nice grain and great finesse in the mouth that remains fresh and light. It will be accompanied by dishes quite "tender" but tasty, a roast veal with ceps for example, poultry (goose, guinea fowl, duck ...) in brown sauces.
This magnificent vintage of Saint-Emilion Grand Cru, named "The Lady of Eleven Hours" comes from the name of a small liliaceae, from the family of thrush whose flower does not open every day... at eleven o'clock. This small plot is maintained like a garden, grown organically, without weedkiller or chemical, by the other way this lady would not appreciate! The use of companion plants, the return to the balance of fauna/flora, the cessation of fertilizers and weedkillers, the restitution of marcs, etc. bring back a forgotten harmony in these vineyards.
Vinified in specially designed vats, without exogenous yeasts, the wine is then aged in new barrels at 50%for 18 months. Only six thousand bottles have been put up for sale... so we will have to hurry to enjoy the benefits of this lady.
