Winemaking: Manual in small boxes, sorted in the winery, broken harvest at 0%. Maceration cold 7 days, regulation of the fermentation temperature, two punching a day, maceration for 21 days. Breeding: On lees in oak casks (20%new) for 15 months, malolactic fermentation and late, without sticking or filtration, bottling and natural bottled by gravity.
