Vineyard: The vines are grown without pesticide or insecticide, and the unique contribution, manure, is of natural origin. The Earth is worked without weed killer, to maintain aeration as well as the flexibility of the floor.
Winemaking: Manual in small boxes, sorted in the winery, broken harvest at 0%. Maceration cold 7 days, regulation of the fermentation temperature, two punching a day, maceration for 21 days.
Farm: On lees in oak barrels (30%new) for 18 months, malolactic fermentation and late, without sticking or filtration, bottling and natural bottled by gravity.
