The palate perpetuates the complexity, with a big volume in the attack, it is ample on a fine matter with a very long finish.

Aged for 24 months in demi-muids, this "Dérive" vintage has great complexity, sublimated by its length in the mouth.

Drink at 18°C, open at least 1 hour before serving, decanting can only do it good. It will accompany red meat and game, but also mature cheeses.

The Cabardès is a dream terroir with a varied geology, situated in the west of the Languedoc and south of the Massif Central, a balance between east and west, sun and coolness, garrigue and mountain. The grapes are harvested by hand on these clay-limestone slopes on the southern slopes of the Montagne Noire, situated at an altitude of 300 metres.

"Le domaine de Cabrol est un incontournable dans le paysage de Cabardès. Perché à 350 mètres d'altitude, ce terroir de montagne offre un paysage luxuriant, assez rare en Languedoc.

Au milieu des 120 hectares de terres, on trouve ici et là des vignes en coteaux et en terrasse. Le vignoble de 20 ha est sous la main de Nicolas Carayol, qui assure la continuité familiale tout en installant une touche plus moderne et audacieuse dans les vins, à l'instar de la sympathique cuvée Blue Note.

On retrouve une majorité de vins rouges, avec une cuvée en blanc, une très belle réussite (grenache, chenin et manseng). Professeur d'économie à Bordeaux, Nicolas a décidé d'ouvrir ce lieu aux visiteurs : un espace événementiel voit le jour à l'été 2023 et des chambres avec piscine sont en projet." RVF Guide
