Vinification: Manual picking in crates, sorted in a winery, scraped at 0%. Cold maceration for 7 days, fermentation temperature regulation, two pigs per day, cooking for 21 days. Breeding: On dies in oak barrels (20%new) for 15 months, natural and late malolactic fermentation, without bonding or filtration, racking and bottling by gravity.
