What a fitou!
A new generation Fitou with lots of fruit, composed of 4 grape varieties and raised in barrels.
This wine requires decanting one hour before the meal and to be served at a temperature of 16oC.
The "ancestral" cuvée is made from Vines of thirty years.
They are located on clay-limestone soils. Grown in reasoned driving, with a return to ploughing on all plots and the use of intercep on some. The harvest is manual. After sorting through the plot, the grapes are traditionally peeled and vinified by alternating drawings and reassemblys.
The Ancestrale cuvée is aged in barrels for more than months.
