Its terroir, through the Gamay Noir and Poulsard grape varieties, is fully expressed through a unique process of elaboration: The Ancestral Method.
The Cerdon Ancestral Method:
. A low alcohol level (About 8 degrees)
. A very flattering pink colour
. A thin, light foam.
. A very strong aromatic expression of the grape varieties with a dominant red fruit.
. A semi-dry character resulting from a harmonious balance of residual acids and sugars (natural sugars of grapes).
