Cuvée historique du domaine. Issue majoritairement de vieilles vignes de Grenache, c’est un Châteauneuf-du- Pape classique, très « terroir », avec beaucoup de profondeur... Il embaume la fraise des bois : c'est un vin solaire, qui s'impose par sa stature solide et son fruit généreux. Racé et plein, c'est une très belle réussite. Ce Châteauneuf-du-Pape "Clos" présente une couleur rubis profond, violet, avec des tanins soyeux et une bonne acidité. 

TERROIR :
Les raisins sont issus de Lieux-dits très variés : Montalivet, La Crau, Les Blachières, Coste Froide, Bois Seneseau, Palestor, Bois Dauphin , Pied de Baud, Les Bousquets, Les Parrans, Les Marines, Le Bois de la Ville, Cansaud, Les Gallimardes et Les Serres. Ils s'étendent du nord au sud de l'appellation.
Les sols sont principalement constitués de colluvions à quartzites, d’argiles marines, de sables et grès mollassiques..

ASSEMBLAGE : 
80% Grenache, 10% Syrah, 6% Mourvèdre, 4% Cinsault, Counoise,
Vaccarèse, Muscardin, Terret noir, Picpoul noir.

VINIFICATION :
Les cuves sont remplies par gravité avec un éraflage partiel. Le travail des vins se fait sans chercher une extraction maximale mais privilégie davantage l'élégance et la fraîcheur. 
Les jus de goutte et de presse sont élévés séparément, principalement en cuves bétons où ils réalisent leur fermentation malolactique.
Après assemblage l'élevage se poursuit en foudres.

The Estate Clos du Mont-Olivet

The Clos du Mont Olivet was created in 1932 by Séraphin Sabon, and since its origins the family estate has been producing high quality, classic Châteauneuf du Pape on magnificent terroirs, as well as Côtes du Rhône wines of excellent quality.
The vineyard covers 32 hectares, 20.5 hectares of which are used for the Châteauneuf wines, which are made from a large majority of Grenache grapes, while the whites are made from Bourboulenc and Roussanne.


The domain still seems to be unknown in the area. But for how much longer...? The wines of the domain are regularly acclaimed by the finest tasters such as Parker, Bettane & Desseauve, RVF who often place Clos du Mont Olivet among the elite of the region.

The wines are always very deep, rich, imbued with their terroir, ready to stand the test of time. They will begin to peak at 10 years of age and will finish well after 20 years, depending on the vintage, when they will deliver all their aromatic complexity, which is impressive here. The Petit Mont is easier to access because of its constitution and also because of its really angelic price... As for the Côtes du Rhône, they are very good alternatives, providing a maximum of pleasure, like this Varène, which is predominantly Syrah and offers exceptional value for money... Then you may have the opportunity to touch the grail with this Papet cuvée produced only in the best vintages, which is the flagship cuvée of wine lovers.

The Clos du Mont Olivet is to be discovered as a matter of urgency because of the quality and consistency of all the vintages. Come and discover them on the website Les Passionnés du Vin. "La nouvelle génération, Jérémy, Alec et Diana, est aux manettes. Le domaine Dujac n'a jamais été aussi maître de son art, profitant à plein d'une discipline impeccable de viticulture et de la fidélité à la vinification pour partie en raisins entiers, qui donne un cachet et un pouvoir de vieillissement supplémentaire à la plupart des vins.

À l'activité autour des 17 hectares du domaine s'ajoute, sur 5 hectares et pour quelques cuvées de village, une petite activité de négoce, sous le nom de Dujac Fils et Père (dans cet ordre), avec des vins de même style.

Les vins sérieusement construits par le passé évoluent vers des textures plus légères, plus délicates. 2019 qui pouvait donner des rouges très denses a été construit ici sur l'élégance." 4*/5 Bettane+Desseauve

The Estate Sol Payré

Five generations of winegrowers have succeeded one another at the estate, from Gustave Payré to Jean-Claude and Bertrand Sol. The Domaine is located in Elne, in the heart of the Aspres, in Roussillon, at the foot of the Pyrenees, the natural border with Spain. Reasoned protection, yield control and maturity are our watchwords! The particularity of the Domaine comes from the different terroirs with in the south, in the Aspres (Elne and Passa), about fifty hectares on clay-limestone soils, greedy wines with character and in the north, in the Agly valley (Maury), about ten hectares spread over Schist, Granite and Gneiss, here it's the minerality that speaks, the fineness of the tannins and the complexity of the aromas
