Historic vintage of the estate. Mostly from the old vines of Grenache, it is a classic Châteauneuf-du-Pape, very "terroir" with a lot of depth... It embalms the strawberry from the woods: it is a solar wine, which stands out for its solid stature and generous fruit. Racy and full, it's a great achievement. This Châteauneuf-du-Pape "Clos" has a deep ruby color, purple, with silky tannins and good acidity.
TERROIR:
The grapes come from a wide variety of places: Montalivet, La Crau, Les Blachières, Coste Froide, Bois Seneseau, Palestor, Bois Dauphin, Pied de Baud, Les Bousquets, Les Parrans, Les Marines, Le Bois de la Ville, Cansaud, Les Gallimardes and Les Serres. They extend from the north to the south of the appellation.
The soils consist mainly of quartzite colluvions, marine clays, sands and mollassic sandstones.
ASSEMBLAGE: 80%Grenache, %Syrah, 6%Mourvèdre, 4%Cinsault, Counoise,
Vaccarèse, Muscardin, Terret noir, Picpoul noir.
Winemaking:
The tanks are filled by gravity with partial scraping. The work of the wines is done without seeking a maximum extraction but more emphasis on elegance and freshness.
Drop and press juices are raised separately, mainly in concrete vats where they perform their malolactic fermentation.
After assembly the breeding continues in lightning.
Service temperature 15oC
Mets and Wine Pairs: Southern cuisine, game birds / hairs, Cheeses.
