This cider is a dry cider, very expressive, at once lively and refreshing, with tart little notes. Very refreshing, this cider title to 5.5 percent alcohol.
The Sidre Brut is made from 20 different varieties, sweet, sour and bitter. Apples are harvested manually and stored a few weeks for a dehydration of the fruit. They are then assembled, coarsely crushed and strained delicately. Ancestral natural fermentation is done in vats or casks and bottles over several weeks with more or less of natural residual sugar (fructose) so no chaptalisation (adding sugar sucrose).

Exploitation is located on Shales of the upper Brioverien, dating from the Precambrian sedimentary rocks; What are rocks formed before the primary era, 3 billion years old. These are normally quite soft rocks, giving birth to limono-clayey or silty areas.
