20, our harvest to Aÿ, Dizy, Hautvillers, Avize and Oiry: the winter is very cold and snowy, spring and the early summer remain cold and wet, generating coulure and millerandage and delaying flowering and maturity. August and September are hottest and driest allowing a harvest late, but very beautiful. The Pinot noirs of Aÿ and Dizy and chardonnays of Avize are particularly successful. The harvest is completed by some reserve wine.

The concept of the cuvée 700 is unique in Champagne and is located opposite the raw without year! We strive for excellence rather than regularity, respecting the character of the vintage rather than its negation and putting forwards a great wine rather than maintaining a style. The contribution of reserve wines is done to enhance the complexity but without concealing the nature of the base year. It is for these reasons that it was useless to continue the development of a vintage wine that would have made that impoverish the cuvée 700.

It comes from our three great vintages and our two Premiers Crus, it is developed only from the first press juice, it is vinified in casks, almost always without filtration, it is above all a great wine of Champagne. It has of course a remarkable potential for aging, and that's why we offer with two different maturation.
