50%Avize, village classified Grand Cru Chardonnay, located at the Court on the side of whites, terroir where the purest of champagne, called Belemnite, chalk fossil shells deposited there is millions of years, which brings freshness and minerality, finesse wines which have also a nice presence in the mouth.
For this wine we have made a selection of old vines of more than 50 years and opted for a strict winemaking in 225 litre oak casks.
25%Aÿ, village Grand Cru Pinot Noir, located on the border between the Valley of the Marne and the mountain of Reims, called this land "Great Valley of the Marne". The special exhibition the South and the rugged terrain of the hills allow pinot noir to express the aromas of ripe fruit, and to combine power and finesse. This old vine is still composed of old Pinot noir to small grains.
Historic village of Champagne, there are calcareous, sedimentary soils where chalk is still strongly present.
25%Ambonnay, village Grand Cru Pinot Noir, located in the mountain of Reims, Kingdom of the Pinot Noir. The mountain of Reims is a large tray covered forest where the vineyard is located on chalky soils. The forest acts as a thermal regulator between the cold air of the evening descends on the plain and formed in day hot air that goes back to the top.
We made the choice to keep our old vines, planted in the 1950s, with small yields but who give of advantage of maturity and concentration in the fruit.
Unlike Chardonnay which is a fragile and delicate grape, Pinot Noir is a vigorous vine adapting very well to the calcareous soils, which produces wines that are characterized by their strength and their consistency, well supported by a good frame. The aromas are very thin with these famous notes of red fruit.
Avize, Aÿ and Ambonnay, are the only three villages classified Grand Cru of Champagne that the first letter is a. Hence the name given to this wine, but need more looking for originality in its composition, 50%of Chardonnay Avize, associated with 50%of Pinot black, Aÿ and Ambonnay.

The dress is light gold with a few copper highlights, by a fine bubble and intense color well supported. The wine is thick and fat, a sign of great wealth and draws a beautiful leg along the glass.
The nose is flattering on typed notes Chardonnay, like lemon, pineapple, and especially the mango, relieved by a side butter made by an ageing in oak. We also find notes of red fruits such as: blackcurrant and raspberry characteristics of Pinot Noir, as well as aromas of licorice.
The prospective vinous nose side goes in the mouth by the presence of the Pinot Noir, which gives a velvety, smooth and suave, associated with finesse, the freshness and minerality of the Chardonnay.

To do a good champagne, need good grapes, it's why picking is done when the maturity is optimum in order to transmit the champagnes the expression of the terroir.
